For us this afternoon, it will be cod with shallot and radish butter sauce, fresh tuna escalope with citrus fruits, and beef tartare for Monsieur.

Hot in front! Meeting with chef Edouard Maurel

After the service, head to the kitchens of the pinnace coffee to meet Edouard Maurel, the new crazy chef. Second in the kitchen for 4 years at Pinasse Café, he now takes over the management of the stoves! During our meeting, the Chef explains to us that he finds his inspiration in the mix and balance of textures, between acidity and bitterness or crunchy and soft...

During his career, he rubbed shoulders with the kitchens of the Grand Palais in Biarritz and the Pressoir d'Argent in Bordeaux before settling down on the Bassin from Arcachon to the Pinasse Café.
His favorite recipe? Beef tartare with Bassin oysters smoked with pine needles. We will definitely come back to taste it!
